Pecorino Cheese


Cheese has always constituted one of the fundamental food supplies of inland areas.

Everywhere in the hills of the Marche region pecorino marchigiano is made, sheep’s milk cheese that is produced more than any other in the territory, characterized by a mild or intense flavor depending on the aging.

It should be emphasized that a major boost to cheese production, even in Cupramontana was due to the dissolution of sharecropping: in the 1970s, many sheep farmers from Sardinia came and settled on land that had been allocated to grazing livestock, often abandoned by the migration of sharecroppers and farmers.
